In this episode, I sit down with Geison Paschoal, the dedicated barista-turned-quality supervisor at Søren & Son, a distinctive café nestled on Dean Street in Dublin 8. Geison’s story unfolds like a perfectly crafted espresso shot – rich, intentional, and brimming with character.
Once a lawyer in Brazil, Geison reinvented his life through coffee. His transformation began with a barista course that sparked a passion he couldn’t ignore. Since arriving in Dublin in 2018, he has journeyed through various cafés, persevered through COVID closures, even survived a cycling accident and coma. And yet, his love for the craft never wavered – instead, it deepened. Now, at Søren & Son, he champions quality control, ensuring that every cup lives up to an unwavering standard.

During my visit, Geison prepared a flat white for me, brewed with a blend from Sumo Coffee. Smooth and balanced, the cup carried a sweetness that lingered long after the last sip. The milk was silky, folded seamlessly into the espresso, and the flavors spoke of care, precision, and the quiet pride of someone who knows his craft. It wasn’t just a coffee – it was a quiet reflection of what Søren & Son are trying to achieve: excellence, without pretension.

He dreams of adding more jazz into the mix, and names B.B. King among his personal favorites. For him, music shapes the café atmosphere as much as the beans themselves, helping to make the space welcoming, calm, and just a little soulful.
